Mom’s Quesadillas

I don't have a pricey, fancy, recipe. Just one that makes me think of my loving mom, may she rest in peace.
When I was a kid growing up, we didn’t have much money, but mom could make a feast out of anything.
I always think of her when I make these simple quesadillas...

Mom’s quesadillas


  • 1 Tablespoon of olive oil

  • Corn Tortillas (flour if you want)

  • Cheddar cheese

  • Havarti Cheese

  • Sour cream

  • Cilantro

  • Avocado


  1. Warm up a skillet to a medium heat. You’ll know it’s ready when water dances off the warm skillet.

  2. Spray the skillet with PAM olive oil spray.

  3. Add a tablespoon of olive oil.

  4. Add CORN tortillas, and let them cook for 30 seconds on one side.

  5. Turn over and add your favorite cheese.

  6. Combining cheddar and havarti is a good combo!

  7. Wait till the cheese begins to melt, then fold over with your spatula.

  8. Continue cooking till desired crispiness.

  9. Add a dollop of sour cream, and cilantro

  10. Add hot sauce if you like it spicy.

  11. Serve with sliced avocado on the side.
