Oh So Fancy Open-Faced Breakfast Sandwich

Serving size: One sandwich


  • One egg

  • 1 shallot (or ¼ onion)

  • 1 large dinosaur kale leaf (regular kale works too, you only need a handful)

  • ½ large carrot

  • One slice of bread (I like Dave’s bread but use whatever, live your life!)

  • Hummus (any kind)

  • One teaspoon olive oil or cooking spray

  • One bowl cold water

  • Salt and pepper


  1. Bring a small pot of water to a boil.

  2. Finely slice the shallot, julienne the kale, and grate the carrot, then set aside.

  3. When the water boils, put in your egg and set a timer for 7 minutes.

  4. Toast your bread then spread with a generous layer of hummus

  5. In a medium skillet add one teaspoon of oil (or spray to cover pan) and set over medium heat. Add the shallot and cook until it starts to brown, about 3 minutes. Then add the kale and carrot and sauté for about 1 minute. Remove and add onto your hummus’d toast.

  6. Ding! When your alarm goes off for your egg, remove it and place in the cold bowl of water for a minute. Peel it, slice it, and add to the sandwich. You can cook your egg any way you like, I just prefer medium soft boiled is all.

  7. Add salt and pepper to taste, or douse it in sriracha, you do YOU!
