Believe it or not...this is not a “my mom” recipe...this is right out of an old fashioned Betty Crocker cookbook that my Dad gave me! He had received it as a “promotional item” from, I guess the Betty Crocker people, as he was in the grocery business..
As with any recipe you can improvise...some add raisins ...tho I don't like them “in there”...! You can assemble the items even the night before and mix and bake the next day...
it is so easy and SOOOOOOOOOO GOOOOOOOOOD!...I lure my son over when I make it...One of the few times he can't wait to get here!...enjoy!
1 8oz. package WIDE Manischewitz egg noodles
2 eggs, slightly beaten
1 cup dairy sour cream (you can replace with plain yogurt, but is not nearly as tasty!)
1 cup small curd cottage cheese (also full fat)
1/2 cup white granulated sugar (not honey)
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Cook noodles as directed on package: drain.
Mix remaining ingredients, add cooked noodles , toss gently.
Pour into greased 2-quart casserole. make sure you get butter or whatever you “grease” with (butter is tastiest) all over the inside-sides of the pan, not just the bottom.
Bake uncovered, on a middle rack in a preheated 350 degree oven until golden brown, 40-50 minutes...If you want the top noodles a little crispier and browner you can put under boiler for a minute or so...NO LONGER...AND KEEP WATCHING!
If I am serving in the evening, it is a super easy dish to make earlier, bake, cover with foil and leave out of the refrigerator, until read to serve. Cut into squares with a SHARP knife, to serve. Room temperature is fine...or right out of the oven good too...and great cold from the refrigerator for several days after (if it lasts that long)...also an easy recipe to double if you want to. I do a little easy on the sugar, as I don't like it too sweet...but YUM YUM YUM!....YOU WILL HAVE RETURN CUSTOMERS EVEN WHEN YOU DON'T WANT THEM!..
